  • Last night, I made this trash heap soup with the express purpose of using up things in my fridge and pantry before my upcoming move. Instead of my usual one diced onion, I cut up all three I had on hand, because really, who wants to pack and onion and move it? Then I threw in all the shallots I had, the remainder of a head of garlic and a bunch of celery, two bunches of kale (purple and lacinato), a bagful of homemade veg stock ice cubes I had in my freezer, a carton of maitake mushrooms, a can of butter beans, a can of coconut milk, a sprinkle of kalustyans saffron rice spice mix and for the finishing touch, a double handful of chopped cilantro and mint. Surprise surprise it was delicious and now my formidable kitchen packing task is just a smidgen easier, and i have a vat of deliciousness to help me power through it.
