My snowstorm-induced captivity caused me to get creative with the contents of my cupboards to come up with these winter warmers. Using homemade stock, a can of tomatoes, windowsill thyme, a bay leaf, onions, garlic, carrots and celery (all things I always like to keep on hand for the express reason of this sort of on-a-whim cooking). I quick-soaked a pot of beans, boiled some whole wheat pasta, threw in some thawed frozen spinach, drizzled a little olive oil, grated Parmesan op top and Minestrone soup was officially on.
I also (-gasp-) baked, which seemed like a proper thing to do while snowed in, right? Using steel cut oats (not rolled oats, which 99.9% of oatmeal raisin cookies apparently call for), I made these crunchy, healthyish cookies with golden and flame raisins.
