This weekend I made it down to the lovely Jenny’s new oceanside La Strada Pizzeria at Matunuck Beach in Rhode Island. After working up an appetite walking up and down the gorgeous beach, we sat down to two amazingly delicious wood fired pizzas from the cool looking outdoor oven: one was the special Carpenter’s Pizza, named after the nearby farm where the spinach and sausage were sourced; the other was the Bunky, named after Jenny’s spunky pup, and it was a lemony peppery delight topped with Italian proscuitto. [Check out the whole menu here] I literally want to move to RI tomorrow and just eat pizza and swim in the ocean every single day for the rest of the summer.

Last night, I made this trash heap soup with the express purpose of using up things in my fridge and pantry before my upcoming move. Instead of my usual one diced onion, I cut up all three I had on hand, because really, who wants to pack and onion and move it? Then I threw in all the shallots I had, the remainder of a head of garlic and a bunch of celery, two bunches of kale (purple and lacinato), a bagful of homemade veg stock ice cubes I had in my freezer, a carton of maitake mushrooms, a can of butter beans, a can of coconut milk, a sprinkle of kalustyans saffron rice spice mix and for the finishing touch, a double handful of chopped cilantro and mint. Surprise surprise it was delicious and now my formidable kitchen packing task is just a smidgen easier, and i have a vat of deliciousness to help me power through it.

This should undo the martinis Jenny made me drink at the Richardson last night. Contents: apple juice, spirulina, chlorophyll, cilantro, parsley, sunflower sprouts, banana, avocado, celery, lemon and ice. Bye bye hangover!
